I would like to wish Tipperary Natural Mineral Water the very best on their twenty fifth anniversary. For any business to reach such a milestone is impressive and I think that Tipperary Water has achieved this by pushing boundaries and standards – something that we all have to constantly focus on in the 'hospitality industry'. Not just in the interest of gaining Gold Medals for Excellence or Michelin Stars or other such awards, but for attracting customers and more importantly maintaining them!

This in the context of my restaurant means constantly mixing it up, creating new and innovative dishes with fresh, seasonal ingredients and most importantly, keeping ambition and motivation going – no resting on our laurels!
